When it comes to keeping your little ones healthy, it isn't enough to simply get them involved with regular exercise like swimming. Their diet has a big impact on their health, as well as their behaviour.

One of the most important things when it comes to your children's diet is that they get enough fruit and vegetables. This aspect of their diet provides them with natural energy, vitamins, minerals and fibre, all of which are important to their overall health and development.

However, it can be difficult to get little ones to eat more vegetables, especially if they are fussy eaters. This is where a few small changes to the way you prepare their meals can make all the difference and get them eating a broader range of healthier foods.

Courgetti

This is a really easy meal that can add some fun vegetables into your diet. Rather than serving up pasta with a meal, try making your own courgette spaghetti.

All you need is a julienne peeler or spiraliser, which will slice the courgette into thin, spaghetti-like strips. You should keep the skin on, as it will add extra texture, keep the strips from falling apart and provide more goodness to your kids.

Once you've cut up all your courgette, simply add to boiling water for a few minutes until tender, then serve with your choice of sauce.

Carrot chips

Rather than deep fat frying potato chips for an unhealthy, high-carbohydrate meal, you can actually bake carrot chips for a healthy alternative.

All you have to do is cut up carrots into fry-size pieces and bake with a teaspoon of oil until crispy on the outside. This is a great way to add some more vegetables to your little ones' plates while still giving them something they love.

You can even use other vegetables like courgette, parsnips and sweet potato to create a variety of chips that will get your kids eating a greater variety of healthy food.

Vegetable crisps

Children love crisps, but they aren't the healthiest snack around. As well as being starchy, they also contain high levels of fat and salt.

This is why making your own can offer them a healthy and tasty alternative. You can make crisps out of a huge number of vegetables, just as with chips.

Simply slice the vegetables as thinly as you can and use kitchen towel to remove as much moisture as possible. Place each slice on a lined baking tray and sprinkle a teaspoon of oil over them before baking until crisp.

You can then bag up your crisps in resealable sandwich bags to provide a handy snack on the go, or in lunchboxes.

Vegetable mash

Mashed potatoes are a base of a number of meals, but they offer very little in terms of nutrition. You can add more to a meal by swapping potatoes for other mashable vegetables, giving your little ones something they recognise but keeping it healthy.

Root vegetables are great for mashing, as they have a similar texture to potatoes and offer a lot of vitamins, as well as being incredibly tasty.

Just as with potatoes, all you have to do to prepare mashed carrots, swede, parsnip and cauliflower is cut them up into pieces and boil until tender before mashing. You can serve this as it is or use it to top things like shepherd's pie.
